Homemade Vanilla Cashew Milk

I'm obsessed with this milk.

Think creamy, rich and whole-milk-like. 

I put it towards the back of my refrigerator so it's extra cold and then pour a glass, sprinkle a bit of cinnamon or nutmeg on top and drink straight.

This milk also makes my morning Matcha Latte equally as awesome. 

The key to making the milk extra creamy is soaking the nuts before blending. I used to skip this step and when I finally started doing it it made a world of difference in the texture. 

I make a batch of this every weekend as a part of my food prep and it lasts me through Friday for my smoothies and morning drinks. 

If you make a lot of smoothies, I would recommend making a double batch.

Brussel Sprout Breakfast Bowl

Can I just tell you that this whole veggies-for-breakfast thing is really new in my life?

And I can bet many of you reading this probably think people who eat green stuff for breakfast have lost it a bit.....

A year ago I was happily woofing down multiple Kodiak cake waffles several times per week and then alternating with sourdough bread the other mornings. 

And not that waffles and sourdough bread are a bad choice for breakfast, but I've found that 95% or more of my clients function heaps better during the day in terms of energy, digestion and mental focus when they start their day out with a protein, fat and veggie based meal. 

The longer I hang out with my Summit Fit tribe and learn to eat our power foods daily, the more I crave crunchy veggies with sauerkraut and crushed red pepper for breakfast. 

For me, vegetables are all about how well you spice them up and what foods you combine them with to enhance their flavor.

Creamy Chicken Pot Pie Soup

It has been a rather lazy Sunday and with a messy kitchen from a neighborhood BBQ last night, I was torn between feeding my kids a bowl of yogurt for dinner or using up the leftover chicken in our refrigerator.

Fancy, I know. 

People often think I always feel like cooking a meal. Can I just tell you... that couldn't be farther from the truth! 

Living a healthy lifestyle is a choice I made about ten years ago but I have to continually make that choice....especially with two busy kiddos in the picture now. Trust me, once you make the decision to change your habits around food and health, the desire to eat junk food or take the easy route through the drive through doesn't disappear.

The Best Ever Dairy-Free Cheeseburger Soup

We were spoiled with two straight days of rain this weekend. That literally never happens in Denver. 

After spending all day yesterday at continuing education classes for my personal training certification and then stepping out into the cold, rainy weather, I was craving a creamy, hot, flavorful soup.  

Before going home, I stopped to pick up a few ingredients for soup, including nutritional yeast. 

I had been wanting to experiment with nutritional yeast as it adds a nutty, cheesy, savory flavor (plus loads of nutrition) to dishes that typically call for a ton of processed cheese and milk. 

Let's just say it did not disappoint. 

You can use it to replace dairy in dishes like alfredo sauce, mashed potatoes, scrambled eggs, chicken dishes, casseroles...you name it! It's loaded in Vitamin b12 and considered an inactive form of yeast. Matcha Latte and It's Benefits

I've been sharing and post pictures on my matcha latte for well over a month now so I'm excited to finally share the official recipe and benefits in a blog post with you. 

This crazy green drink has become a favorite part of my routine. The contents of matcha provide me with incredible energy levels without the crash that other forms of caffeine bring (sugary coffee, energy drinks, etc).

And it has has the most wonderful taste I never expected to enjoy as much as I do my morning coffee.....but I do! 

I alternative between this and my bulletproof coffee as a part of my morning routine.  

If you don't wake up a few minutes early for a morning routine, I highly suggest you do! Getting out of bed on my terms to fuel my mind and body well before the chaos of the day begins is truly what sets the rest of my hours up for success.

10 Creamy Dairy-Free Pantry Staples

If you would have asked me a few years ago to name some "creamy" foods, I would have listed all of the dairy products known to man-kind.

And although I still consider whole, organic (pasture-raised) dairy to be a nourishing food, many people simple can't digest and process it's contents without negative side-effects. 

Just last year when I was chugging multiple glasses of whole milk each day along with consuming cheese, sour-cream and other dairy products on a regular basis, I was dealing with chronic digestive issues along with constant drainage in my sinuses that made breathing during exercise extremely difficult. 

I basically spent my days with this constant "drip" going on, kleenex in hand and wishing I could talk without sounding like I had a perpetual cold. Additionally, our youngest son has chronic sleep apnea which makes his breathing progressively worse at night when consuming mucus-producing dairy.
